Brrr! January can be chilly, and cold weather calls for one thing—soup! But there’s something extra special about this month. It’s National Soup Month! That makes it the perfect time to grab a bowl, get cozy, and enjoy all the warm, tasty soups that make winter feel a little brighter.

Marie’s Cozy White Chili

Warm, creamy, and perfect for a cold day.

Ingredients

  • 3 cans (16 oz each) Great Northern beans
  • 4 cups cooked, chopped chicken (rotisserie works great)
  • 1 tbsp olive oil
  • 2 medium onions, chopped
  • 4 garlic cloves, minced
  • 2 cans (4 oz each) mild green chiles
  • 2 tsp ground cumin
  • 1 ½ tsp oregano
  • ¼ tsp cayenne pepper
  • 6 cups of chicken broth
  • 3 cups grated Monterey Jack cheese
  • Salt & pepper
  • Sour cream for topping

Instructions

  1. Heat olive oil in a large pot over medium‑high heat. Add onions and cook until soft and translucent (about 10 minutes).
  2. Add garlic, green chiles, cumin, oregano, and cayenne. Cook for 2 minutes.
  3. Add beans (undrained) and chicken broth. Bring to boil.
  4. Reduce heat to low. Add chicken and cheese. Stir until it melts and creamy.
  5. Season with salt and pepper.
  6. Serve with a dollop of sour cream.

Extra Tips

  • No chicken? Add another can of beans and use vegetable broth.
  • This soup LOVES sourdough bread for dipping.
John’s Easy‑Peasy Ramen Mug

A quick, cozy soup you can make in minutes.

Ingredients

  • 1 packet of Maruchan ramen
  • A large mug (16–20 oz)
  • Hot water

Instructions

  1. Heat 2–3 cups of water.
  2. Gently break the ramen (keep it in the packet).
  3. Pour noodles into your mug.
  4. Add boiling water and let sit 3–5 minutes.
  5. Drain most of the water.
  6. Stir in the seasoning packet.
  7. Enjoy right from the mug.
Amanda’s Cheesy Tortellini Spinach Soup

Creamy, simple, and deeply comforting — your kitchen will smell amazing.

Ingredients

  • Ground chicken sausage
  • Butter
  • Mushrooms
  • Leeks
  • Garlic or Italian herbs
  • One wheel of Boursin cheese
  • Chicken broth
  • Cheese tortellini
  • Spinach

Instructions

  1. Cook sausage until golden; set aside.
  2. In a large pot, melt butter and cook mushrooms and leeks until soft.
  3. Add your favorite spices.
  4. Stir in the whole wheel of Boursin until creamy.
  5. Add sausage back in and pour in chicken broth.
  6. Add tortellini and cook until tender.
  7. Stir in spinach until wilted.
  8. Serve warm and enjoy.
Jen’s Childhood Cauliflower Soup

A nostalgic classic from her childhood, she remembers the warm, cozy smell of her mom’s cauliflower soup, the kind of scent that made everything feel happy.

Ingredients

  • 4 tbsp chopped onions
  • ¼ cup butter
  • 2 tbsp flour
  • 4 cups of scalded milk
  • 1 tsp of salt
  • Dash of pepper
  • 1 medium head cauliflower, cooked & chopped
  • 1 cup shredded cheddar cheese

Instructions

  1. Sauté onions in butter until tender.
  2. Stir in flour and cook 3–4 minutes (don’t brown).
  3. Add scalded milk, seasonings, and cauliflower.
  4. Cook until smooth and slightly thickened.
  5. Add cheese just before serving and stir until it melted.
